Oven Roasted Tomatoes Recipe

Roasting tomatoes give them delicious caramelized flavor. Serve as a side dish, on pizza, as an appetizer on sliced French bread or in Spaghetti with Oven Roasted Tomato Sauce.

Ingredients
  • 2 pounds medium plum tomatoes (10 to 12), halved lengthwise
  • 1 tablespoon McCormick® Perfect Pinch® Italian Seasoning
  • 1 teaspoon McCormick® Parsley Flakes
  • 3/4 teaspoon salt
  • 1/2 teaspoon McCormick® Garlic Powder
  • 1/2 teaspoon McCormick® Black Pepper, Ground
  • 1/3 cup olive oil, divided

1. Preheat oven to 400°F. Place tomato halves, cut sides up, in 15x10x1-inch foil-lined pan sprayed with no stick cooking spray.

2. Mix Italian seasoning, parsley, salt, garlic powder, pepper and 1/4 cup of the olive oil in small bowl until well blended. Spoon olive oil mixture over tomato halves. Drizzle tomatoes with remaining olive oil.

3. Bake 45 to 60 minutes until tomatoes are soft and brown on top.
