Ingredients
  • 1 can sweet azuki beans (18 ounce can)
  • 1 can sweet azuki bean paste (18 ounce can)
  • 5 cups flour
  • 1 pound butter, softened
  • 1 cup sugar
  • 1/2 cup evaporated milk
  • 1/4 cup water
  • 2 teaspoons baking powder
  • 1 dash salt
  • 1 egg, beaten
Directions
Lightly grease and flour 9x13 inch pan.

Cream butter and sugar; add dry ingredients alternating with milk and water; mix well.

Use half of dough and spread in pan to form the bottom crust.

Mix both cans of beans together then spread over bottom crust in pan.

Roll remaining dough between wax paper to form top crust. Place dough over beans in pan. Make sure the beans are completely covered with dough.

Brush top crust with beaten egg, coat well.

Using a fork, pierce top crust so that manju can breathe while baking.

Bake in 350 degree oven for 40-45 minutes.

Cool manju well before cutting into squares.
