BLUEBERRY OAT BRAN MUFFINS Recipe

Ingredients
1 1/4 cups flour
2 teaspoons baking powder
1/2 teaspoon Salt
1 cup oat bran
1/2 cup sugar
2 eggs, beaten, or 4 egg whites
3/4 cup skim milk
2 tablespoons vegetable oil
1 cup blueberries (or chopped cranberries)
1/4 cup chopped walnuts or pecans
Directions
Preheat oven to 425°. Sift flour, baking powder and salt into bowl and add oat bran and sugar. Stir well to combine. In a separate bowl, beat eggs, milk and oil. Pour into dry ingredients. Stir only briefly. Add blueberries and nuts and stir briefly again. Do not overwork--lumps of flour will show. Fill greased muffin cups nearly to the top. Bake 20 minutes or until golden brown. Makes 12 small muffins.
