Whole Yellowtail Snapper Recipe

If you are fortunate enough to catch these marvelous fish in the ocean or in your favorite seafood market, try grilling them whole. You will find yourself digging out tasty morsels with your fingers and grinning like a cat when you are done with nothing left but a beautiful bone to admire!

Ingredients
  • One Yellowtail Snapper per person, 1-2 lb fish
  • 1/2 orange per person, sliced
Directions
Preparation:
  • Scale fish & Clean body cavity
  • Fill body cavity with 3-4 orange slices
  • Make 2-3 slits on both sides of the fish through the meat
Grilling:
  • Low to Medium Low Heat 350F
  • Oil GrillGrates with olive oil just prior to putting fish on the grill
  • Grill 3-4 minutes and turn once
  • Marinade lightly with butter
  • Grill 3-4 minutes more or until fish is all white, the skin will likely fall away enough to check the doneness
