Sausage-Vegetable Stuffed Peppers Recipe

Ingredients
  • 4 green peppers cut in half - uncooked
  • 1 1/2 pounds Premio sausage, out of casings - uncooked
  • 1 medium onion - finely chopped
  • 2 eggs
  • 2 medium zucchini - shredded
  • 1/2 red pepper - finely chopped
  • 1 can (14 oz.) diced tomatoes
  • 1/2 cup grated parmesan cheese
  • 1 tablespoon finely chopped parsley
  • 1/2 cup black olives - chopped
  • 2 teaspoons fennel seed (optional)
  • salt to taste
  • black pepper (as much as you like)
Directions
COOK
1 hr
  • Combine all of the filling ingredients in a large bowl.
  • Fill the peppers with the mixture.
  • Bake at 350ºF for 1 hour.
