If you like tator tot hotdish, you will love this take on it. The creamy meat mixture with the mashed potato toppings is a great combination. Don't skimp on the mashed potatoes on the top - they are everyone's favorite part. Great way to use leftover mashed potatoes or use your favorite recipe to make them just for this recipe.

Ingredients
  • 1 pound ground beef
  • 1 can peas, drained
  • 1 cup frozen corn
  • 4 ounces sliced mushrooms, drained
  • 1 can cream of mushroom soup
  • 1 can cream of celery soup
  • salt and pepper, to taste
  • 3 cups mashed potatoes
  • 3 tablespoons butter

  • Preheat oven to 350 degrees.
  • In a large skillet, cook ground beef over medium-high heat until no longer pink; drain.
  • Stir in vegetables, soups and season with salt and pepper. Heat through.
  • Pour into 9x13 baking dish. Cover with mashed potatoes and dot with butter.
  • Bake for 30 minutes or until potatoes are golden and meat mixture is hot and bubbly.

"This recipe was very tasty and my whole family liked it. The only problem was that I used instant potatoes and with the moisture from the two cans of soup the potatoes ended up getting too moist. Next time I will make sure my potatoes are extra stiff to begin with. Also, I didn't add the mushrooms because my kids won't eat them."
