Creamy Taco Soup with Rice Recipe

Ingredients
  • 1 pound ground beef, browned and drained
  • 1/2 cup white instant rice cooked in 1 1/2 c water
  • 2-10 oz cans enchilada sauce
  • 2 cans Fiesta Nacho soup
  • 1 can tomato soup
  • 2 cans Cream of Chicken soup
  • 1 can Ro-Tel tomatoes with chilies
  • 1 can beef broth
  • 1 1/2 cups milk
  • Tortilla chips, crushed
  • Sour Cream
  • Shredded Cheddar cheese

  • Mix together, including any excess water left after cooking the rice.
  • Cook on stovetop on medium-high until thoroughly heated.
  • Serve with crushed tortilla chips sprinkled on top. Garnish with sour cream and shredded cheddar cheese.
