Oven Baked Caramel Corn Recipe

Brown sugar and corn syrup combine to make the sweet coating everyone loves on popcorn. Surprise your kids with the sweet after school snack.

Ingredients
  • 15 cups popped popcorn
  • 1 cup brown sugar, packed
  • 1/2 cup butter or margarine
  • 1/2 cup corn syrup
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 cup peanuts (optional)
Directions
Heat oven to 200°. Using two 9x13 pans, put half the popcorn into each.

Mix brown sugar, butter, corn syrup and salt. Cook and stir until it bubbles around the edges. Cook 5 more minutes.

Add baking soda and stir until foamy.

Pour half the mixture over each pan. Divide the peanuts and stir into each pan, stirring until corn is covered. Bake for 1 hour, stirring every 15 minutes.

VARIATION: To make jello popcorn, omit brown sugar and add 2 small boxes of jello.
