Ingredients
  • 2 pounds bag Ore-Ida hash browns, thawed
  • 1 can cream of chicken soup
  • 1 cup chopped scallions
  • 16 ounces sour cream
  • 8 ounces shredded sharp (or mild) Cheddar cheese
  • Optional: 1 stick melted butter and
  • crushed potato chips for topping
Container:9 x 13 baking dish
Directions
  • Mix all the ingredients together in a large bowl. Save some cheese for topping.
  • Pour into the baking dish and top with reserved cheese.
  • Cover with foil and refrigerate overnight.
  • Remove from the refrigerator and take off the foil.
  • Bake at 375 degrees for 45 minutes to 1 hour. Serves 8.

"This is a staple potato recipe in my family that all love!! Some recipes call for added oil or the butter, but keep in mind, the cheese has a lot of oil so that's usually plenty!! Soooo very tasty and yummy!! This is a good alternative when you're tired of mashed potatoes, stuffing or others!! To get a crispy topping, take the foil off towards the end of baking! To make it more like a cutted square casserole per serving, add an egg to stiffen it up like you would lasagna. Definitely try this if you've never had these!!"
