PECAN ICEBOX COOKIES Recipe

Ingredients
  • 1 cup Brown Sugar
  • 1 cup white sugar
  • 1 cup pecans, chopped
  • 1 cup butter
  • 1 egg, beaten
  • 1 teaspoon vanilla
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 3 cups confectioners sugar
Directions
Cream sugars and butter. Add the beaten egg and vanilla. Continue mixing. Add baking soda, baking powder and flour gradually until all is thoroughly mixed. Add the pecans. Shape into long rolls, about 1 3/4 inch in diameter. Roll in wax paper and leave in refrigerator overnight or in freezer for 1 hour. Slice in thin, 1/4 inch slices and bake in preheated 400° oven until light brown.
