Frosted Zucchini Bars Recipe

Ingredients
  • 1 cup butter or margarine
  • 2 cups sugar
  • 4 eggs, beaten
  • 2 teaspoons vanilla
  • 2 1/4 cups flour
  • 1/2 teaspoon salt
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • 2 cups zucchini, grated
  • FROSTING:
  • 4 tablespoons margarine
  • 1/2 teaspoon vanilla
  • 1 1/2 cups powdered sugar
  • 3 ounces cream cheese

  • Cream together the butter and the sugar.
  • Add the eggs and the vanilla; mix well.
  • Combine the flour, salt, baking soda and cinnamon; add this dry mixture to the creamed mixture and blend well.
  • Add the zucchini and mix well.
  • Spread the batter in a greased 13x15 inch pan and bake at 350ºF for 30-35 minutes.
  • For the frosting, combine the cream cheese, butter, vanilla and powdered sugar; beat until smooth and creamy.
  • Spread the frosting on the cooled bars.
