Ingredients
1 1/2 cups vegetable oil
3 eggs - large
2 cups bananas - ripe and mashed
8 ounces pineapple - crushed and drained
3 cups flour
2 cups sugar
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon cinnamon
1 cup coconut - flaked
1 cup macadamia nuts - chopped

Preheat oven to 350° F.
Grease and flour 2 (9 x 5") loaf pans.
In a large bowl, beat oil and eggs with mixer at medium speed.
Beat in bananas, pineapple and vanilla until combined.
In a large bowl, combine flour, sugar, baking soda, salt and cinnamon.
Gradually add to oil mixture, beating until combined.
Stir in coconut and nuts.
Pour batter into prepared loaf pans.
Bake 50 to 55 minutes, or until a tester inserted in center comes out clean.
Remove from oven and let sit for 10 minutes.
Remove from pans and cool completed on wire racks.
