Ingredients
  • CHIPOTLE MAYONNAISE
  • 1 cup mayonnaise
  • 1/2 cup sour cream - regular or low fat
  • 2 tablespoons lemon juice
  • 2 cloves garlic
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 chipotle pepper - canned in adobe sauce (use less if you don't want much heat)
  • SLAW
  • 1 bunch broccoli - cut into bite size pieces
  • 1/2 package cabbage mix (16 oz.)
  • 1/2 package red cabbage (10 oz.)
  • 1/2 package carrots - shredded
  • 2 apples - peeled, diced
Container:medium container, large mixing bowl, food processor

MAYO:
  • Combine mayonnaise, sour cream, lemon juice, garlic, salt, pepper, and chipotle in food processor. Process until smooth, adjust seasoning to taste.
  • Cover and chill.
SALAD:
  • Combine broccoli, cabbages, carrots and apple in large bowl.
  • Right before serving, pour chipotle mayo over slaw. Toss to blend.
  • Serve immediately.
