SOUFFLE AU FROMAGE (CHEESE SOUFFLE) Recipe

Ingredients
3 tablespoons butter
1/4 cup flour
2 cups milk
1/3 cup grated cheese
4 eggs, separated
1 pinch salt and pepper
Directions
Melt butter in sauce pan. Add flour and let cook 1 minute. Remove from heat, pour in milk and leave to cook 2 minutes while stirring evenly until the mixture thickens. Let the mixture cool down. Add grated cheese, salt, pepper and the egg yolks, one by one stirring continuously. Beat the egg whites until firm. Fold into cheese mixture at the last minute. Pour mixture into buttered soufflé dish. Bake at 350° for 30 minutes. For best results serve immediately. Serves 4.
