Irish Soda Bread with a Twist Recipe

Ingredients
  • 4 cups flour
  • 1/4 cup sugar
  • 1 teaspoon Salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 pound butter/margarine
  • 1 tablespoon vanilla
  • 2 cups craisins (may use 2 cup raisins & 3-4 T. caraway seed for authentic bread)
  • 1 1/3 cups buttermilk
  • 1 egg, beaten
Directions
In bowl mix flour, sugar, salt, baking powder, baking soda. Cut in butter until mixture resembles coarse meal. Stir in craisins. Combine buttermilk & egg, stir in dry ingredients just until moistened. Turn out on floured surface & knead lightly until smooth. Shape dough into balls & place on greased baking pan. Pat into a 7" round loaf. Cut a 4" cross about 1/4" deep to allow for expansion. Brush top with milk. Bake 375° for 50 minutes
