Ingredients
1 cup low fat ricotta cheese
1 cup tomatoes, chopped
1/2 cup bell peppers, chopped
2 cloves garlic
1 tablespoon olive oil
Salt
Pepper
Basil
Directions
Sauté vegetables in oil. Stir in ricotta cheese and spices. Serve over brown rice or quinoa.
