This is a great way to use up some of the leftover turkey from your holiday meal.

Ingredients
  • 2 pounds potatoes, peeled and cubed
  • 2 cups turkey, cooked and cubed
  • 4 tablespoons butter
  • 1/4 cup milk
  • 1 onion, chopped
  • 2 stalks celery, chopped
  • 2 carrots, grated
  • 1/2 cup peas, frozen
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 teaspoon poultry seasoning
  • 1 1/2 cups chicken broth

Preheat over to 350 degrees. In a large sauce pan, cook potatoes in boiling salted water until fork tender. Drain water and mash. Beat in milk and butter. Set aside.

In a large skillet, over medium high heat cook onion, celery, and carrots until slightly soft, approximately 5 minutes. Combine cooked turkey with vegetables in casserole dish. Add frozen peas. Using same skillet, melt 2 tablespoons butter. Whisk in flour, salt, pepper, and poultry seasoning. Add chicken broth and stir until thickened. Pour into casserole dish and stir to combine. Spread mashed potatoes over meat mixture. Bake 30 minutes.
