Ingredients
1/4 pound bacon
1 egg, well beaten
1 1/2 cups milk
5 teaspoons baking powder
1 tablespoon sugar
3/4 teaspoon salt
2 1/2 cups bread flour
Directions
Preheat oven to 400°. Cut bacon into bits and fry until crisp. In a small bowl, cream together 2 T. bacon grease and sugar. Add egg and milk. In a separate bowl, mix baking powder, salt and flour together. Stir into bacon grease mixture. Fold in bacon bits. Pour batter into greased muffin pans and bake 25 minutes. These are great with jam, honey or try as mini turkey sandwiches.
