Eclair Dessert Recipe

Ingredients
  • 1 cup water, boiling
  • 1/2 cup butter, melted
  • 1 cup flour
  • 4 eggs
  • 8 ounces cream cheese, softened
  • 2 packages instant vanilla pudding (3.5 oz each)
  • 3 cups milk
  • 8 ounces whipped topping
  • chocolate syrup

For crust:
  • Stir water, butter and flour together.
  • Add eggs one at a time, stirring well after each addition.
  • Pour into pan and place in a 400° F. preheated oven. Bake for 30 minutes. Crust will be bumpy. Let cool.
For Filling:
  • Cream cream cheese.
  • Add pudding mixes and milk. Stir until well mixed.
  • Pour over cooled crust.
  • Top with whipped topping.
  • Drizzle with chocolate syrup before serving. Note: If desired, you can use "shell" chocolate syrup to help prevent the chocolate syrup from running on the whipped topping.
Note: For a nice variation to this recipe chocolate pudding mix could be used in place of the vanilla pudding mix to make this a chocolate eclair dessert.

"There is Nothing that angers me more than when a recipe leaves out VERY IMPORTANT DETAILS in their directions. This dessert DID NOT say to spray or grease the pan and since it contained butter I assumed that just maybe it might not be necessary. I made three x's the recipe for thanksgiving and all three pans stuck!!! Stuck bad!!! Luckily I had enough ingredients left to make one half a pan and two hours later and one very tired and pissed off self, made it all over again except this time I sprayed it and it did not stick one bit and came out beautiful. It was not enough and not even close to what I promised to bring so next time I'll navigate the available recipes or go with something I already know will work before I use this site again. Leave nothing up to assumption folks. When it comes to recipes you can't afford to guess or assume anything that your not told to do."
