If a packaged pancake mix is to be used, prepare according to directions on the package and follow instructions below for cooking pancakes in the heart mold.
If pancakes are to be made without a pre-packaged mix, begin by assembling the ingredients listed.
In a large mixing bowl, sift flour, baking powder, sugar, and salt, mixing together.
Add to sifted ingredients the eggs, milk and melted shortening.
Beat batter ingredients making sure the mixture is smooth in consistency.
Let batter stand in refrigerator for 15 minutes.
Coat heart shaped pancake molds with vegetable oil to keep batter from sticking. Also coat skillet with oil.
Heat cooking skillet on a medium heat setting.
Place molds into skillet and pour approximately 1/4 cup of batter into each mold.
Remove skillet from heat when bottom of pancake in mold is golden brown. Remove partially cooked pancake from mold, flip pancake over and return skillet to cook remaining side until golden tan.
When ready to refill pancake molds, coat each mold with oil, place back into skillet and fill with batter.
To keep cooked pancakes warm while preparing and baking others, place finished pancakes on a cookie sheet to be warmed in the oven turning temperature to 200ºF.
When ready to serve, top with several strawberries cut in half and shaped like a heart. Powdered sugar can also be sprinkled over the pancakes if desired. Then use a fruit topping or maple syrup to sweeten the pancake flavors.
