Ingredients
  • 3 pounds corned beef brisket
  • 5 medium potatoes, scrubbed, unpeeled, sliced into 1 inch chunks
  • 1 large onion - cut into wedges
  • 1 head of cabbage - cut into wedges
  • 4 cups apple juice
  • 1 cup brown sugar
  • 1 tablespoon Dijon mustard

  • Place meat, potatoes, onion, and cabbage in a slow cooker.
  • Sprinkle with the seasoning packet that came packaged with the corned beef.
  • Combine apple juice, brown sugar, and mustard in a medium bowl.
  • Pour over the vegetables and meat.
  • Cover and cook on high for 6 to 6 1/2 hours or on low for 10 to 12 hours. The meat and vegetables should be very tender.
  • Remove the meat and vegetables from the slow cooker.
  • Thinly slice the meat across the grain and serve with the vegetables.
  • Serve with crusty bread if desired.

"this is the worst recipe for corned beef I have ever seen and a huge waste of time Corned beef is already seasoned there is no reason to add anything, the only reason I looked at this was to decied when to add the cabbage. Save yourself some time and money and just add some water to cover cook on low for 12 hours then add cabbage the next morning and cook it until tender, if you like more spice you can add the spice packet, but be careful if you have a small brisket that packet will be way to much as all the spice packets are the same amount no matter how big or small it is."

"I agree with Birdie, the sweetness of the liquids did not suit the vegetables at all. I would make the recipe again but only to cook the corned beef and then slice it thin for sandwiches."

"I am new at using a slow cooker but I can say that there was NOTHING left to complain about, every body loved it, even the Kids (and they are picky about what they eat)I have already gave this recipe to two people that ate it tonight.. 5 star is as high as you go but I would rate it a 10 if I could"

"The sweetness of this recipe did not suit the vegetables at all--leftover vegetables were discarded.  However, the leftover corned beef made delicious sandwiches.  Maybe next time I will just cook the meat and leave out the cabbage, onion and potatoes."
