Savory melted cheese served over toast or white, salty crackers has been a traditional recipe referred to a Welsh Rarebit in numerous British homes for many many years. It is a recipe that is now enjoyed all over the world, which is often referred to as English monkey a reference commonly used for this dish in Europe. In the early versions of the Fannie Farmer cookbook this recipe is referred to as both "Welsh rarebit" and "English Monkey." Welsh Rarebit can be served as an entree, or as an appetizer, seasoned and flavored for use as an appetizer dip with crackers or vegetables that can be dipped into the cheese.
