2 egg whites
3 cups sweetened shredded coconut
1/4 cup sugar
1/8 teaspoon almond extract
1 pinch salt
1/2 cup chocolate chips
1/2 cup sliced almonds (optional)

Preheat oven to 350. Cut a piece of parchment paper or aluminum foil to fit baking sheet (parchment paper works better).
Mix all ingredients together. Make mounds of batter about 1 inch apart, with about 2 tablespoonfuls in each mound.
Bake until light golden brown, about 15 minutes. Let sit on pan to firm up for a minute or two, then remove to a cooling rack.
