  • 2 cups flour
  • 3/4 cup sugar
  • 2 1/2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 cup milk
  • 2 tablespoons instant coffee granules
  • 1/2 cup margarine, melted
  • 1 egg, beaten
  • 1 teaspoon vanilla
  • 3/4 cup miniature chocolate chips
  • ESPRESSO FROSTING:
  • 4 ounces cream cheese, softened
  • 1 tablespoon sugar
  • 1/2 teaspoon instant coffee granules
  • 1/2 teaspoon vanilla
  • 1/4 cup miniature chocolate chips

In a bowl, mix together flour, sugar, baking powder, cinnamon and salt. Set aside.

In another bowl, mix milk and coffee granules until dissolved.

Add margarine, egg and vanilla; mix well. Stir in flour mixture. Fold in chocolate chips.

Fill muffin liners 2/3 full. Bake at 375° for 17-20 minutes For frosting, beat cream cheese, sugar, coffee granules and vanilla until smooth. Fold in chocolate chips.

Frost cooled muffins with Espresso Frosting.

"I am not a coffee lover so I was nervous about these muffins, but the coffee is just a hint in the background. The frosting is to die for, especially when the muffins are still warm. The perfect coffee party muffin."
