ZUCCHINI BREAD 6 Recipe

Ingredients
  • 1 zucchini (medium)
  • 1/2 cup oil
  • 1 cup Sugar
  • 2 Eggs
  • 1 1/2 cups flour
  • 1 teaspoon vanilla
  • 1/2 teaspoon soda
  • 1/2 teaspoon Salt
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 cup chopped nuts
Directions
Shred zucchini to make about 1 1/2 cups. Combine oil, sugar, eggs, vanilla, soda, spices, salt and baking powder. Blend. Add flour and beat smooth. Add nuts and zucchini. Pour batter into greased and floured 9x5 loaf pan. Bake until tests done at 300°F., about an hour. You can also bake this in the mini loaf pans. Test with a toothpick for doneness.

NOTE: If you don't have fresh zucchini, use a quart of your canned zucchini that has been very well drained and mashed.
