Gluten and Wheat Free Ham Loaf Recipe

Servings: approximately 1/4 pound per person - 1/6 of each loaf.
Ingredients
  • 2 pounds ground baked ham
  • 1 pound ground pork sausage
  • 3 eggs-slightly beaten
  • 2 cups gluten free, wheat free bread crumbs
  • (approximately 4 sliced of gluten free, wheat free bread)
  • 1 sweet onion - chopped
  • 8 ounces tomato sauce
  • 1 tablespoon spicy brown mustard
  • 1/3 cup brown sugar (packed)
  • 1 tablespoon mustard (prepared or spicy)
  • 1/4 cup cider vinegar
  • 1/2 cup catsup
Container:9x13 baking dish or larger.

  • Preheat oven to 350°
  • Coat inside of pan with vegetable cooking spray.
  • In a food processor, grind ham until desired consistency. Also process bread until it resembles coarse crumbs, if you do not have wheat free gluten free bread crumbs already.
  • Mix ham, pork sausage, eggs, bread crumbs, onion, mustard, and tomato sauce together until completely combined.
  • Form into two loaves in prepared baking dish.
  • In a small bowl, combine glaze ingredients and pour evenly over each ham loaf.
  • Bake 50-60 minutes. Let cool slightly before serving.
  • Leftovers make great sandwiches.
  • For easy clean up, line baking dish with foil and coat well with a vegetable cooking spray.
