Andes Mint Cookies Recipe

The frosting on these mint cookies is created with an Andes mint. A chewy chocolate cookie topped with an Andes mint blends the two flavors together to create a delicious mint cookie. Andes Mint Cookies are a great addition to your Christmas cookie tray.

Ingredients
  • 3/4 cup butter
  • 1 1/2 cups brown sugar
  • 2 tablespoons water
  • 12 ounces chocolate chips
  • 2 eggs
  • 2 3/4 cups flour
  • 1/2 teaspoon salt
  • 1 1/4 teaspoons baking soda
  • 24 Andes mints

  • In a medium-sized saucepan, melt together the butter, brown sugar, and water, stirring occasionally.
  • Add the chocolate chips and stir until melted. Let stand 10 minutes to cool. Add the remaining ingredients and combine to form a dough.
  • Chill the dough at least 1 hour.
  • Roll the dough into balls and place on a lightly greased cookie sheet, leaving ample space between the dough balls.
  • Bake at 350 degrees F for 8 to 9 minutes.
  • Remove the cookies from the oven, and on top of each cookie, place half of an Andes mint. Allow the mint to melt and then swirl the mint over the cookie with the back of a spoon or a knife.

"HELP! I've tried this recipe many times and no matter what, the chocolate seizes. I've tried adding very gradually, melting the chocolate first then adding, and it always seizes. I tried to save it by reheating everything together to combine but all the oil separated and I had to throw it away."

"I have also been making these cookies for years and they are always a favorite. For the non-mint fans in my house, we use the cherry Andes candy instead. Gives a cherry chocolate taste instead and everyone is happy! I also used to be able to get the green/choc/green Andes version which added more green color, but have a hard time finding them any more, so the key is to minimize the swirling and then some of the green shows up."

"I have been making this cookie for a few years! It's my favorite Christmas cookie. A few tips-- make sure the mints are unwrapped and stacked so that you can put them on the cookies as fast as possible, more time for melting the chocolate. Also, it depends of course on how big you make these cookies, but i have always put a full andes mint on my cookies, and they are usually 1 1/2" across when finished. This means that i usually use 3 or 4 boxes of andes mint for 1 recipe. Unless you are making a large cookie and only putting 1/2 a mint on top I would imagine that you will need more than 1 box for this recipe."
