Ingredients
CRAB SPREAD:
8 ounces cream cheese
8 ounces crab meat
2 tablespoons lemon juice
4 tablespoons hot sauce
1/4 cup celery, chopped into fine bits
CHICKEN SPREAD:
8 ounces cream cheese
2 cups minced cooked chicken
1/3 cup mayonnaise
salt and pepper, to taste
onion powder, to taste

1 loaf Pullman white bread
1 loaf Pullman rye bread
1 loaf Pullman cheese bread

Crab Spread:
Warm cream cheese to room temperature.
Mix crab meat with cream cheese. Add lemon juice, hot sauce, and celery and mix thoroughly. Chill.
Chicken Spread:
Warm cream cheese to room temperature.
Combine all ingredients until well blended. Chill.
Assembly:
Cut each loaf lengthwise into slices 1/2" thick, producing 5 to 6 slices per loaf. Spread chicken mixture on face of one slice. Top with a slice of pullman cheese bread. Top that slice of bread with crab mixture and add a third slice to create 3 tiers of bread. Repeat.
Cut the tiers into individual sandwiches approximately 1 to 2 inches wide and secure with decorated toothpicks (garnish each toothpick with an olive, if desired).
