Ingredients
  • 2 cups all purpose flour
  • 2 cups white sugar
  • 2 eggs
  • 2 cans mandarin orange (11 oz. each), drained
  • 2 teaspoons baking soda
  • 2 teaspoons vanilla
  • 1/2 teaspoon salt
  • TOPPING:
  • 3/4 cup brown sugar, packed
  • 3 tablespoons butter
  • 3 tablespoons milk
  • 1/2 teaspoon vanilla

  • Preheat oven to 325ºF. Lightly spray pan with non-stick cooking spray.
  • Place all ingredients in a large mixing bowl. Beat for 3 minutes with an electric mixer.
  • Pour into prepared pan and bake for 30 minutes.
  • While the cake is baking, combine in a small saucepan over medium heat the ingredients for the topping. Bring to a boil. Boil for 1 minute. Pour hot topping on cake immediately after it is removed from the oven.
  • Serve warm or at room temperature. May garnish with whipped topping if desired.

"This cake is awesome!! I didn't have much in my pantry when I found this recipe. It is my go to favorite. Takes no time at all and always turns out perfect. I add a little brandy to the glaze for added flavor. My family is obsessed. I highly recommend trying this recipe. You don't need many ingredients or a lot of time to make a delicious dessert."

"I tried this recipe because it looked like an old one I had lost. First of all, it doesn't say what size of a pan(finally figured out it had to be 9X13). Secondly, in the body of the recipe directions it says to bake for 30 minutes. The cake wasn't done in the middle and when I poured the topping over it , of course the cake fell. On further examination of the recipe I see that it says Prep 15 mins, COOK 45 mi.....????? Really??? That is a contradiction in terms if I ever saw one!!!! Meanwhile, I have a ruined cake, wasted ingredients, etc,etc,etc. I rate your website -5 stars."

"Easy recipe and everyone loves it have had repeat requests already. Great for extended family get togethers, if you are hosting. I like it best right out of the oven with ice cream topping. Tastes good next day also, just heat in microwave."
