Sweet Squash Slaw Recipe

Anyone who likes cole slaw will enjoy an alternative way to fix a slaw, using a sweet squash as the base for this unique salad.

Ingredients
  • 1 pound sweet squash, raw
  • 1/2 cup raisins
  • 1/3 cup light mayonnaise
  • 1/2 teaspoon celery seed
  • 1 teaspoon sugar
  • 1 teaspoon (to 2 teaspoons) lemon juice, fresh, adjust to taste
  • salt, to taste
  • black pepper, freshly ground, to taste
Directions
PREP
15 mins
  • Grate squash coarsely in a medium bowl. Add raisins and toss.
  • In a separate bowl, whisk together mayonnaise, celery seeds, sugar and lemon juice. Pour mixture over the grated squash mixture and blend.
  • Season to taste with salt and pepper. Cover and chill before serving.
