Vegetable Stuffed Peppers Recipe

You won't even miss the rice in this vegetable filled pepper. The sweet tomato sauce is delicious especially with garden fresh peppers. Perfect for all those vegetables you grow yourself!

Ingredients
  • 4 green bell peppers, tops removed, seeded
  • 1 pound ground turkey
  • 1 tablespoon oil
  • 1/2 onion, finely diced
  • 1 zucchini, finely diced
  • 1 cup carrots, finely diced
  • 1 cup mushrooms, finely diced
  • 1 can crushed tomatoes (14.5 oz can)
  • 1 can tomato sauce (8 oz can)
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • salt and pepper, to taste

Preheat oven to 350 degrees F.

Place peppers in baking dish and cover with aluminum foil. Bake 15 minutes in the preheated oven.

Meanwhile, in a skillet over medium-high heat, cook the turkey until evenly brown; set aside.

Heat oil in the skillet over medium heat and cook onion, zucchini, carrots and mushrooms until tender, approximately 8-10 minutes.

Return turkey to the skillet with vegetables. Add the tomatoes and tomato sauce, Italian seasoning, garlic powder, salt and pepper.

Stuff the green peppers with the skillet mixture.

Cover with foil again and return peppers to the oven, and continue cooking 35-40 minutes.

"Delicious! The filling was SO good! I had a whole bunch of peppers, so I doubled the recipe, using half ground beef and half ground turkey. I was able to stuff 11 peppers and still had a little filling leftover that I just put around the bottom of the peppers. I served it with spaghetti noodles and my kids put the filling on the spaghetti. I did not miss the rice at all."
