An appetizer that will be gone in no time, so be sure to have some before you put them out. No need for a sauce, but cocktail sauce goes good with these if you want.

Ingredients
  • 20 large raw shrimp, peeled, deveined
  • 1/2 cup olive oil
  • 3 lemons
  • 1/4 cup soy sauce
  • 1/4 cup fresh parsley, chopped
  • 3 tablespoons fresh tarragon, chopped

Wash shrimp and place them in a bowl.

Pour over the oil, juice from the lemons, soy sauce, parsley and tarragon.

Let marinate for 1 hour, tossing occasionally. Don't marinate them longer since they will cook in the lemon juice and get tough.

Broil under high heat or grill for 5 minutes, turning at least once. Do not overcook!

Serve warm, cold or at room temperature.

"Very tasty shrimp appetizer. I broiled them and then refrigerated them until ready to serve and they didn't last 5 minutes! The tarragon was delicious with the soy and lemon."
