Ham, Egg and Toast Cups Recipe

Great recipe for kids and easy enough to feed a crowd. Depending how you like your eggs, you could beat them up before putting them in the muffin cups to be more like scrambled eggs.

  • 6 slices bread
  • 6 slices ham
  • 6 eggs
  • salt and pepper, to taste

Preheat the oven to 400° F. Grease 6 wells of a muffin pan with butter.

Cut out rounds of bread and press the bread rounds into the greased muffin wells. Place a slice of ham on top of each piece of bread, making a well for the egg.

One at a time, crack an egg and drop it in the center of the ham well. Once all the bread pieces have been topped with eggs, sprinkle with salt and pepper.

Bake until eggs are cooked through to your liking, approximately 10-12 minutes.

Run a knife around the edge of each muffin well and pop the egg cups out.
