S'mores Cookies Recipe

All the flavor of those campfire treats but none of the mess. Make them up and hand them out. No fussing over waiting for a marshmallow stick. They taste great, too.

Ingredients
  • 2 packages graham crackers
  • 2 1/2 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 11 tablespoons butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1/2 cup semi-sweet chocolate chips
  • 1 cup mini marshmallows
  • 3 Hershey candy bars

Preheat oven to 375 degrees. Line baking pans with parchment paper. Lay graham crackers side by side on pans as close as possible.

In a medium bowl, sift together flour, baking soda, salt and cinnamon.

In a large bowl, cream butter with sugars until light and fluffy. Add eggs, one at a time, and vanilla; mix until combined.

Add flour mixture to the butter mixture and combine.

Fold in the chocolate chips and marshmallows.

Place 1 1/2 tablespoons of dough on each graham cracker square, pressing lightly. Bake for 5 minutes.

Remove from oven and press a chocolate rectangle on top of each. Bake for 5-7 more minutes or until dough is golden brown at edges.

Remove to wire rack to cool. Cool completely before cutting with a sharp knife.
