FRANK'S VEGGIE ROLL UPS Recipe

Ingredients
  • 4 flour tortillas (large)
  • 1 onion, sliced or chopped
  • 10 mushrooms, thinly sliced
  • 1 cubanelle pepper, sliced into thin rings
  • 1 tomato, diced (small)
  • 1/2 zucchini, cut into thin rounds (optional) (small)
  • 1 cup shredded cheddar cheese
  • 1 cup salsa
  • 1/2 cup sour cream
  • 1/4 cup sliced black olives, optional for garnish
Directions
Preheat oven to 350°. Place tortillas on foil on a baking sheet. Add down center, equally; pepper slices, mushroom slices, onion, tomato, (optional zucchini) and cheese. Place under broiler for about 1-3 minutes, until cheese melts. Roll tortilla up, serve with salsa and sour cream. Garnish with olives as desired. Serves 2-4.
