VEGETARIAN TACOS 2 Recipe

Ingredients
1 packet taco seasoning
1 package ground meat vegetarian substitute
1 1/2 cups Mexican cheese (monterrey, cheddar, asadero)
2 tablespoons butter or margarine
4 tortillas (medium)
2 tablespoons Olive oil or vegetable oil
3/4 cup sour cream
1/2 cup diced tomatoes (optional)
1/2 cup shredded lettuce (optional)
salt (to taste)
Directions
Simmer package of meat substitute with oil. Add envelope of seasoning mix to the meat substitute with several dashes of salt. Melt 1/2 T. butter or margarine in frying pan on low and place a tortilla in the pan. On 1/2 of the tortilla add meat substitute and cheese. Top with tomatoes and lettuce if desired. Fold the other half of the tortilla over to cover the ingredients. Once the bottom of the tortilla is brown, flip it over and brown the other side. Spread taco with sour cream or use sour cream for dipping. Serves 4.
