Sweet Potato Pie 84 Recipe

Ingredients
  • CRUST
  • 3/4 cup matzo meal
  • 1/2 stick melted parve margarine
  • 1 tablespoon sugar
  • 1/4 teaspoon cinnamon
  • 1/2 cup unsweetened coconut flakes (optional)
  • Filling
  • 1 1/2 cups cooked, mashed sweet potatoes
  • 1/2 cup sugar
  • 1/2 teaspoon Salt
  • 1/4 teaspoon cinnamon
  • 2 eggs well beaten
  • 1/2 cup water (optional for a lighter pie)
  • 1/2 stick melted parve margarine
Directions
Preheat oven to 400°.

Mix all the crust ingredients together and press on the bottom and sides of a 8" inch pie plate.

Mix all the filling ingredients in a food processor and pour it into the pie crust.

Bake for 45 minutes in the middle of the oven. Done when rises and just starts to crack in the middle.
