Ingredients
2 cups fresh or frozen sliced peaches
1/3 cup apple cider vinegar
1/4 cup dark raisins
1/4 cup golden raisins
1/4 cup dried cranberries
1/4 cup onion, diced
1 clove garlic, minced
1/8 teaspoon freshly ground ginger root
1/2 teaspoon crushed red pepper
1/4 cup brown sugar, packed
1 teaspoon fresh lemon juice
salt to taste

Combine all ingredients in a heavy 2 quart sauce pan. Bring to a full boil, then turn down heat and simmer for 45-50 minutes, stirring occasionally, until thickened.
Cool completely. Refrigerate for 2-3 hours before serving. Makes about 1 1/2 to 2 cups.
