Cranberry Yams Recipe

Ingredients
  • 1/2 cup flour
  • 1/2 cup packed brown sugar
  • 1/2 cup old fashioned or quick oats, uncooked
  • 1 1/4 teaspoons CINNAMON
  • 1/2 teaspoon nutmeg
  • 1/3 cup butter
  • 2 - 17 ounce can of Royal Prince or Princella Yams
  • 2 cups cranberries
  • 1 1/2 miniature marshmallows
Directions
Combine 1/2 cup flour, 1/2 cup packed brown sugar, 1/2 cup old fashioned or quick oats, uncooked, 1/2 tsp. of nutmeg and 1 1/4 tsp. cinnamon. Cut in 1/3 cup butter until mixture resembles coarse crumbs. Toss 1 cup mixture with two 17 oz. cans of Royal Prince or Princella Yams, drained, and 2 cups cranberries: place in 1 1/2 quart casserole. Top with remaining crumbs. Bakes 350 degrees for 35 minutes. Sprinkle with 1 1/2 cups miniature marshmallows. Broil 'til lightly browned. (Typically, I don't broil, I just add the marshmallows and allow it to cook another 10 or so minutes watching the marshmallows carefully so they don't burn.)
