Try this easy make-a-head scalloped potato recipe when you are going to be short of time when preparing the rest of the meal. It can be made the night before and stored in the refrigerator. The next morning all you have to do is plug it in. The scalloped potatoes are very flavorful and make a great dish to take to a potluck dinner.

Ingredients
  • 12 potatoes (medium)
  • 1/4 cup onion (chopped)
  • 1 cup sour cream
  • 1 can cream of chicken soup
  • 1 cup shredded cheddar cheese
  • 1/2 cup butter/margarine
  • 1 teaspoon Salt
  • 1/2 teaspoon pepper

  • Peel and chop or slice potatoes.
  • Cook in enough water to cover for 3 minutes, then drain.
  • Add remaining ingredients, mix well. Spoon into crock pot and cook on high 3 hours or 1 hour on high plus 4 hours on low.

"With little kids running around, I like to be able to prepare things the night before when they are in bed. This recipe was easy to make and I could just plug it in the next day. The kids liked it too so that made it even better. What I also liked about this recipe is that it was really flavorful without being overly cheesy."
