In mixer bowl beat together scooped-out potatoes, 3/4 cup of the cheese, butter, salt, and dash pepper with electric mixer till fluffy. Fold in 3/4 of the crumbled bacon. Pile mixture into potato shells. Place in a shallow baking pan. Bake, uncovered, in a 350o oven 25 to 30 minutes. Top with remaining cheese and bacon during the last 5 minutes of baking.
