Rice Vegetable Cheese Bake Recipe

Ingredients
  • 1 cup uncooked brown rice
  • 1 Sieved Cottage Cheese (2 Cup 1 lb )
  • 2 Eggs
  • 1 package Frozen Spinach/Broccoli, chopped and thawed (10 ounce pkg)
  • 6 ounces Monterrey Jack Cheese, cubed (1 Cup)
  • 1 1/2 teaspoons salt
  • 1/8 teaspoon pepper
Directions
Cook rice according to package directions. Combine cottage cheese, eggs, vegetables, 1/2 Cup cheese, salt and pepper. Stir in cooked rice. Spoon into 2 qt baking dish; dot with cheese. Bake for 30 minutes at 350°.
