Tomato Mexican Rice Recipe

A delicious side dish for any dish, especially a Mexican inspired one. Perfect with burritos or enchiladas. The tomato sauce and bouillon add just the right touch to plain white rice.

Ingredients
  • 1/4 teaspoon oil
  • 1 cup long grain white rice
  • 4 ounces tomato sauce
  • 2 1/4 cups water
  • 1 tablespoon chicken flavor bouillon

Heat oil in large skillet on medium-high; add rice and fry until light brown. Remove pan from heat to prevent burning.

Add water, tomato sauce and bouillon; bring to a boil.

Reduce heat to low, cover and simmer for 20 minutes until all the liquid is absorbed.

Season with salt and pepper, if desired.
