Lentils with Rice Recipe

Ingredients
  • 1 cup lentils
  • 4 cups water
  • 2 onions, chopped (large)
  • olive or vegetable oil
  • 3/4 cup rice or cracked wheat
  • 1/8 teaspoon pepper
  • salt to taste
Directions
Rinse lentils and cook in 6 qt. pan with water approximately 20 minutes until lentil skins come off. While the lentils are boiling, start frying the onions in just enough oil to cover, then until they are browned. Drain off the oil into the lentils, but leave onion in frying pan. Add 1 tsp. salt and 1 cup water to onions and simmer until onions are tender. Add to lentils, pepper and rice or cracked wheat. Cook approximately 20-25 minutes or until wheat is done, stirring occasionally. Serve in large platter. Can be eaten hot or cold.
