Ingredients
2 Potatoes, peeled and cut 1/2 inch squares (Medium)
2 Carrots, 1/2 inch slices (Medium)
1 Zucchini, 1/2 inch slices (Large)
1 Sweet Pepper, 1 inch pieces (Large)
1 tablespoon olive oil
1 teaspoon Dried Basil and Oregano
1/2 teaspoon Salt
1/4 teaspoon pepper
2 cloves garlic, minced
Directions
In large bowl, combine potatoes, carrots, zucchini and red pepper. Combine remaining ingredients and drizzle over veggies. Stir to coat. Transfer to an ungreased 13" x 9" baking dish. Bake uncovered 375° for 30-35 minutes.
