Dill Roasted Red Potatoes Recipe

Dill and parsley add a bite of freshness to these roasted red potatoes. This side dish will please all who eat them an go with anything. Serve it with ketchup and sour cream.

Ingredients
  • 5 pounds new red potatoes
  • 1/4 cup butter (melted)
  • 2 1/2 tablespoons fresh parsley (chopped)
  • 1/2 teaspoon dried dill
  • Kosher salt
  • pepper
Directions
  • Wash and pat dry potatoes and cut them into quarters. Place them in a 9x13 inch baking pan.
  • Add melted butter, parsley and dill together and stir. Drizzle mixture over potatoes, toss to coat evenly, and sprinkle with salt and pepper to taste.
  • Bake at 375° for 35 - 40 minutes or until tender when poked with fork. Turn potatoes once or twice during the baking time.
