  • 1 cup rice (uncooked)
  • 1 pound pork sausage
  • 1 cup chopped onion
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 2 cups shredded cheese

  • Preheat oven to 375 degrees F.
  • Brown sausage and onion together and drain.
  • Cook the rice and combine with the sausage/onion mixture.
  • Add soups and 1 1/2 c. shredded cheese; stir to mix thoroughly.
  • Pour mixture into greased casserole dish.
  • Bake 25-30 minutes or until casserole bubbles in the center. Remove from oven and sprinkle remaining cheese on top. Bake for an additional 5 to 10 minutes.

"The wife and I were looking for recipes to use up our pork sausage we have in the freezer. We found this recipe to try and it was great. She used 2 lbs. of sausage instead of 1 lb. and only about a 1/4 cup of minced dried onions (she doesn't like onions), but otherwise followed the recipe. Our son and kids were there and we ate the whole thing up!"
