Chicken Fried Rice Recipe

Ingredients
  • 1 pound chicken breasts, boneless, skinless
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 1 cup carrots, diced
  • 1 clove garlic, minced
  • 2 cups rice, cooked
  • 1 cup sweet peas
  • 2 tablespoons soy sauce

Cut chicken into 1" cubes and place in skillet with olive oil on medium heat. Cook until brown on all sides.

Add onion and carrots and cook until softened.

Add garlic and cook 1 minute more.

Add rice, peas and soy sauce and stir. Let simmer for 5 minutes, stirring occasionally, then serve.
