Summer Vegetable Stir Fry Recipe

Ingredients
  • 2 yellow summer squash - washed and sliced
  • 2 zucchini squash - washed and sliced
  • 1 pint baby bella or white mushrooms sliced
  • 1 sweet onion, cut into thin slices (large)
  • 2 tablespoons lite soy sauce
  • Salt & Pepper to taste
Directions
Place mushrooms and onion in large pan and turn to medium heat. Place squash and zucchini on top and cover with lid. Let cook slowly for 10 minutes. Uncover, turn heat up to medium high and add in soy sauce. Cook for 5 minutes, stirring lightly a few times. Serves veggies hot!!
