HERB ROASTED VEGETABLES 2 Recipe

Ingredients
  • 3 tablespoons olive oil
  • 1 red bell pepper, seeded and cubed
  • 1 yellow bell pepper, seeded and cubed
  • 2 zucchini, cut into 1/2 inch slices (small)
  • 8 mushrooms, cut inch half (small)
  • 1 bunch fresh asparagus tips
  • 1 teaspoon finely chopped fresh marjoram
  • 1 teaspoon finely chopped fresh thyme
  • 4 cloves garlic, peeled
  • salt and pepper to taste
Directions
Combine all ingredients and toss together until coated with olive oil. Pour into 9x13 baking dish. Roast 12-15 minutes until tender-crisp.
