Ingredients
3 tablespoons olive oil
1 red bell pepper, seeded and cubed
1 yellow bell pepper, seeded and cubed
2 zucchini, cut into 1/2 inch slices (small)
8 mushrooms, cut inch half (small)
1 bunch fresh asparagus tips
1 teaspoon finely chopped fresh marjoram
1 teaspoon finely chopped fresh thyme
4 cloves garlic, peeled
salt and pepper to taste
Directions
Combine all ingredients and toss together until coated with olive oil. Pour into 9x13 baking dish. Roast 12-15 minutes until tender-crisp.
